Venison Pork Sausage

Ingredients

1 pound ground pork

1/2 pound ground venison

2 teaspoons salt

2 teaspoons black pepper

1 1/2 teaspoons dried sage

1/2 teaspoon dried basil

1/2 teaspoon chili powder

1/2 teaspoon Cajun spices

1/2 teaspoon onion powder

1/8 teaspoon cayenne pepper

1/4 teaspoon mustard (recommended: Coleman's)

1 tablespoon grapeseed oil

Directions

  1. Combine pork, venison, salt, black pepper, sage, basil, chili powder, Cajun spices, onion powder, cayenne pepper, and mustard in a large bowl and mix well. Form into patties, logs, or fill sausage casings.
  2. Heat grapeseed oil over medium-high heat in a large skillet. Cook sausage until browned and cooked through.

I only had 1 lb of pork, so I reduced the spices proportionally and used garlic powder instead of cayenne. The result was a very savory sausage with great flavor, but I thought it was too salty. Next time, I'll reduce the salt. But I'll definately use it again.
