Pina Colada

Ingredients

1 1/2 cups frozen pineapple chunks

3/4 cup canned light coconut milk (make sure to stir after opening the can) 

1 1/2 ounces rum 

2 tablespoons shredded coconut 

1 to 2 drops coconut extract 

3 to 5 ice cubes 

Fresh pineapple wedges, for garnish 

Directions

  1. Add the pineapple chunks, coconut milk, rum, shredded coconut, coconut extract and ice cubes to a blender and process until smooth and creamy. Pour into glasses and garnish each with a pineapple wedge.

Best ever! If you can't have a lot of sugar, this is for you! If you want the fatty version that is full of calories and sugar, go for it. This recipe was never designed for that. For those of us who watch our calorie and or sugar intake, this is fabulous!! Fresh fruity and refreshing. Experiment with more pineapple, be sure to stir coconut milk.
