When Le Marcel Dog Bakery opened in Seattle 23 years ago, it was the only doggy- dining establishment in town — and it started with a single treat: peanut butter biscotti taste-tested by Leo and Marcel, the dachshund and Italian greyhound who inspired the shop. For more than a decade, owner Aki Zubovic operated out of a small storefront in Pike Place Market, but demand for his cookies soared, and in 2009, he moved the bakery to San Francisco, where he expanded his menu and space. He now sells more than six dozen sweet and savory treats, which pups can eat while playing on the bakery’s private “Paw”tio. These beloved cheesy stars were inspired by a theory Aki rigorously tested over his 15 years of experience — that all dogs love cheese. Preheat the oven to 350˚ F. Line a baking sheet with parchment paper. Combine the powdered cheddar, honey, applesauce and egg in a large bowl. Add the rice flour and mix with a rubber spatula until combined. Turn out the dough onto a floured surface and roll out until 1/4 inch thick. Cut out stars with a 3-inch cookie cutter.
Arrange the stars on the baking sheet. Bake until lightly browned on the bottom, 10 to 12 minutes. Transfer the stars to a rack and let cool completely.
