I mean, if you are going Greek, you have to have ouzo! I may or may not have snuck a couple of these in my youth… SHH, don’t tell.

Simple Syrup:

Directions

  1. To a cocktail shaker filled with ice, add the ouzo, lemon juice, simple syrup and pear puree. Shake vigorously to chill, then strain into 4 champagne glasses. Top each with sparkling wine and garnish with a lemon twist. Serve.

Simple Syrup:

Yield: 1 cup
  1. Combine the sugar and 1 cup water in a small saucepot and bring to a simmer. Whisk until the sugar is dissolved, then chill until ready to use.
