To a cocktail shaker filled with ice, add the ouzo, lemon juice, simple syrup and pear puree. Shake vigorously to chill, then strain into 4 champagne glasses. Top each with sparkling wine and garnish with a lemon twist. Serve.
Simple Syrup:
Yield:1 cup
Combine the sugar and 1 cup water in a small saucepot and bring to a simmer. Whisk until the sugar is dissolved, then chill until ready to use.
