Add the mahi-mahi to a HOT oiled pan over medium-high heat and sear until cooked through, about 3 minutes on each side. Set aside.
Prepare another oiled pan and heat over medium heat. Add the spinach and garlic and sauté to your liking, 2 to 3 minutes. Layer the mahi-mahi, spinach, black beans, Pineapple Salsa, avocado and Chipotle Sour Cream in the center of the tortilla and roll into a burrito.
Pineapple Salsa:
Yield:16 ounces
Mix together the jalapeños, bell pepper, onion, pineapple, cilantro and lime juice in a large bowl. Cover and refrigerate until ready to use.
Chipotle Sour Cream:
Yield:16 ounces
Mix together the sour cream, chipotles and salt and pepper in a small bowl, then cover and refrigerate until ready to use.
