Peach Caprese Salad with Balsamic Cherries

Ingredients

1 cup cherries (about 22 cherries), pitted and cut into quarters

2 tablespoons aged balsamic vinegar or balsamic reduction 

1 tablespoon olive oil, plus more for drizzling 

1 small shallot, minced 

Kosher salt and freshly ground black pepper

5 peaches 

One 6-ounce log mozzarella 

12 fresh basil leaves, cut into chiffonade strips

Directions

  1. Combine the cherries, balsamic, oil, shallot and some salt and pepper in a bowl. Let sit in the fridge for 30 minutes.
  2. Cut the peaches in half and remove the pits. Cut lengthwise into slices. Slice the mozzarella 1/2-inch thick.
  3. Layer the peaches and mozzarella on a serving plate, alternating one after the other. Spoon the relish over the top, then sprinkle with salt and drizzle with olive oil. Scatter the basil over the top.
