Smoky Cauliflower Bites

Ingredients

Oil, for frying

2 heads cauliflower, cut into florets 

1/2 cup smoked beer 

2 tablespoons kosher salt, plus more to taste 

2 tablespoons liquid smoke 

Freshly ground black pepper 

1/4 cup instant flour, such as Wondra

1/4 cup cornstarch

1 bunch green onions, thinly sliced 

BBQ Dipping Sauce, recipe follows

BBQ Dipping Sauce:

1/2 cup barbecue sauce

1/4 cup ketchup 

1 teaspoon chipotle powder 

1/2 teaspoon cocoa powder 

Directions

Special equipment:
a deep-fryer; a pressure cooker
  1. Preheat oil in a deep-fryer to 360 degrees F.
  2. Add cauliflower, smoked beer, salt and liquid smoke to a pressure cooker. Cook under normal pressure for 6 minutes, then release pressure according to manufacturer's instructions and remove lid. Strain cauliflower and place in a large bowl. Season with salt and pepper.
  3. Add instant flour and cornstarch to a small bowl. Mix to combine. Sprinkle over cauliflower, tossing to coat all the florets.
  4. Deep-fry until golden brown and crispy, about 4 minutes. Sprinkle with green onions and serve with BBQ Dipping Sauce on the side.

BBQ Dipping Sauce:

  1. Mix together barbecue sauce, ketchup, chipotle powder and cocoa powder in a small bowl. Stir to combine.
