The subtle sweetness and unique flavor of green melon make the most delicious margarita. If serving for a summer party, this recipe can easily be doubled!
Peel and seed the melon. Puree the melon in a high-powered blender.
Add 2 cups melon purée (save the remainder for another use), tequila, melon liqueur and lime juice to a pitcher or carafe. Place in the refrigerator to chill completely, about 1 hour. Alternatively, you can add all the ingredients to an extra-large cocktail shaker and shake with ice until chilled.
Rub 4 rocks glasses with a lime wedge, then rim with salt and fill with ice.
Remove the margarita mixture from the fridge and stir. Fill each glass, then serve.
