One of our favorite things about this tried-and-tested roasted cauliflower recipe is how it goes with so much. Serve it as a side dish alongside everything from chicken thighs to lamb chops to burgers, or stir it into grain bowls or pasta salads.

How to Roast Cauliflower Like a Pro

Roasting a cauliflower in the oven is foolproof thanks to Food Network Kitchen’s pro tips.

Cut the cauliflower into evenly sized florets. Halve then quarter the head of cauliflower, then remove the core. Use your hands to snap off the florets and trim any that seem large or unwieldy so they’re all approximately the same size. This helps them cook evenly. Save the cauliflower stems. While this recipe features florets, the stems can be peeled and trimmed to use in cauliflower soup or mash.

Don’t crowd the pan. If the florets are too close together, they’ll steam rather than roast and turn out mushy. Make sure none of the florets are touching each other and they’ll emerge from the oven beautifully caramelized with tender interiors.

Switch up the seasonings. Make this baked cauliflower dish your own by swapping the thyme and red pepper flakes for cumin and a dash of cayenne. Or use finely chopped rosemary or oregano instead of thyme or make Parmesan-roasted cauliflower by sprinkling the florets with a dusting of freshly grated cheese before you slide the pan into the oven.

Add broccoli. Toss 4 cups of broccoli florets with 4 cups of cauliflower florets to turn this into a recipe for roasted broccoli and cauliflower. All other ingredients can remain the same or you can substitute finely chopped fresh oregano or a half-teaspoon of dried oregano for the thyme leaves.

How to Store and Reheat Roasted Cauliflower

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in a 325-degree-F oven for 8 to 10 minutes.
