Made with just sugar, water and dried lavender buds, this easy lavender syrup adds floral flavor to drinks and desserts and will fill your kitchen with South-of-France fragrance. Try it in cocktails, ice tea, lattes or sparkling water, or use it to sweeten whipped cream, custards or frostings or as a delicious soak for cake layers or ladyfingers. Pour it into an attractive bottle for a great gift.

Ingredients

2 cups water

1 cup sugar

1 tablespoon dried lavender buds

Directions

  1. Place the water, sugar, and lavender in a saucepan and bring to a boil. Reduce heat, and simmer, partially covered, for 15 minutes. Strain and cool. Cover and refrigerate for up to a week.

One drop each of red and blue food coloring would make it lavender in color. As far as the recipe goes, it's perfect. If you're looking for a shortcut, like I usually am, put the lavender in a tea steeping ball (is there a proper name for those things? before adding it to the saucepan. Then it won't have to be strained later, which could avoid a mess if your saucepan doesn't have a pouring lip on the side.
