Beer Cheese

My beer cheese is full of sharp Cheddar flavor and balanced with great spices and of course, beer! It comes together in minutes, and it’s easy enough to switch up with your cheese(s) of choice.

Ingredients

2 tablespoons unsalted butter

3 tablespoons all-purpose flour

2/3 cup lager beer

3/4 cup whole milk

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Kosher salt and freshly cracked black pepper

8 ounces sharp Cheddar, freshly grated

Directions

  1. Melt the butter in a medium saucepan over medium heat. Add the flour and whisk it together until a thick paste has formed, about 1 minute. Pour in the beer and continuously whisk so there are no lumps. Cook the mixture to allow the alcohol to cook out from the sauce, 2 to 4 minutes. Add the whole milk, Worcestershire, mustard, garlic powder, paprika, salt and pepper and whisk until everything is fully incorporated. Remove the pan from the heat and add the cheese in batches, making sure all of the cheese has fully melted.

Serve on top of Steak Burger with Hot Pepper Bacon Jam.
