Preheat a griddle over moderately-low heat to 350 degrees F.
Brush one side of each bread slice with the butter. Place the bread on a plate, buttered-side down. Top each piece of bread with a slice of white Cheddar and a slice of mozzarella. Spread the pepper jelly on the mozzarella and layer on the red onions, jalapeños and bacon.
Close the sandwiches butter-side up. Set the sandwiches on the hot griddle. Cook until golden brown, about 5 minutes, then flip with a spatula. Cook until golden brown and the cheese is fully melted, another 5 minutes. Cut the sandwiches in half diagonally and serve hot.
