It’s been a busy month for Chrissy Teigen. She just had her second child a few weeks ago — a baby boy named Miles — and she’s also wrapping up work on her second cookbook, a follow-up to the tremendously successful Cravings. With all that going on, it’s easy to see how she may not have a ton of time to devote to complicated dinners for her family.

Teigen recently shared on Twitter that she’s discovered sheet pan recipes are quick and easy and she’s "fascinated" by them as a way to make simple, healthy dinners

"I have never more understood the desire and need for short, simple meals. 1 kid, I was like ‘ok...easier would be nice but I got this’ but 2 kids, holy s— f— any recipe over 5 steps right now."

"I am fascinated by 'sheet pan meals' right now — sides and main cooked on the same temp at the same time on the same pan," says Teigen, who was making a chicken with chickpeas, turmeric, and cumin recipe that looked delicious.

We see Teigen’s point: Sheet pan meals are a great way to cook all the components of a meal (including protein and veggies) at once. Less prep and less cleanup! Maybe this will inspire a third cookbook for her?

While we wait on that possibility, check out healthy sheet pan recipes below.
